"Liver calories" depends on the animal, on raw against cooked and on how it was cooked. This guide gives nineteen records from the SR Legacy table of USDA FoodData Central: raw liver of chicken, turkey, goose, duck, beef, veal, lamb and pork, and cooked (simmered, braised, boiled, pan-fried or soaked and fried) chicken, turkey, beef, veal, lamb and pork liver, with the weights printed on their record pages. The lamb records are New Zealand imported ones; domestic lamb liver is named on our mutton, lamb and goat guide. IFCT 2017, the Indian Food Composition Tables from ICMR-NIN, has liver rows on our protein in chicken guide and goat organ meat guide, not repeated here. Minced beef is in our ground beef guide, fish in our canned fish guide and leafy herbs in our spinach and herbs guide.

The short answer

By the SR Legacy records, raw liver is 119 to 140 kcal per 100 g across the nine raw records (chicken 119, beef 135, pork 134, veal 140) and cooked liver is 150 to 193 across the ten cooked records (simmered chicken 167, braised beef 191, braised pork 165, pan-fried veal 193). A printed raw chicken liver of 44 g is 52.4 kcal and a printed simmered one of 44 g is 73.5 kcal. Our reading: in every species pair on this page the cooked row is higher per 100 g than the raw row, and in every pair the cooked record prints less water per 100 g than the raw one (SR Legacy 171060 and 171061: 76.5 g and 66.8 g); compare raw against cooked and the animal, not the word liver.

SR Legacy: per printed portion

Each figure is our arithmetic on exact weights: kcal per 100 g times the grams, divided by 100, with the exact product in the sums line and the result shown to 0.1 with half rounding up. Every weight below is printed on the SR Legacy record page; none is ours. Pure ounce portions are not shown, so some records have no row here and the weights table below covers all nineteen.

The sums: 171060 119 × 44 / 100 = 52.36, so 52.4 kcal; 171061 167 × 44 / 100 = 73.48, so 73.5 kcal; 174491 172 × 44 / 100 = 75.68, so 75.7 kcal; 171486 128 × 78 / 100 = 99.84, so 99.8 kcal; 171487 189 × 53 / 100 = 100.17, so 100.2 kcal; 172415 133 × 94 / 100 = 125.02, so 125.0 kcal; 172415 133 × 11 / 100 = 14.63, so 14.6 kcal; 174467 136 × 44 / 100 = 59.84, so 59.8 kcal; 174467 136 × 10 / 100 = 13.6, so 13.6 kcal; 168626 191 × 68 / 100 = 129.88, so 129.9 kcal; 168627 175 × 81 / 100 = 141.75, so 141.8 kcal; 172534 140 × 453 / 100 = 634.2, so 634.2 kcal; 172535 192 × 80 / 100 = 153.6, so 153.6 kcal; 174358 193 × 67 / 100 = 129.31, so 129.3 kcal.

100 g, 250 g and 500 g of liver

Shops and recipes use 250 g and 500 g, which these records do not print. These three weights are ours: each cell is the SR Legacy per 100 g figure times the grams, divided by 100, as kcal, protein and fat, shown to 0.1 with half rounding up. They are for the liver as the record describes it (raw or cooked as named), not for a masala, a fry with oil and onion, or a curry.

Is cooked liver higher in calories per 100 g than raw liver?

Yes, in every pair of records on this page: Chicken liver raw 119 kcal (76.5 g water) against cooked 167 and 172 kcal (66.8 and 65.2 g water) per 100 g; Turkey liver raw 128 kcal (75.5 g water) against cooked 189 kcal (64 g water) per 100 g; Beef liver raw 135 kcal (70.8 g water) against cooked 191 and 175 kcal (58.8 and 62 g water) per 100 g; New Zealand beef liver raw 133 kcal (70.4 g water) against cooked 150 kcal (66.4 g water) per 100 g; Veal liver raw 140 kcal (70.9 g water) against cooked 192 and 193 kcal (59.9 and 59.9 g water) per 100 g; New Zealand lamb liver raw 136 kcal (70.8 g water) against cooked 168 kcal (64.6 g water) per 100 g; Pork liver raw 134 kcal (71.1 g water) against cooked 165 kcal (64.3 g water) per 100 g. In every pair the cooked record prints less water per 100 g, so the same weight is more meat. Log the weight you measured and pick the matching raw or cooked row.

How many calories are in 250 g or 500 g of liver?

For 250 g and 500 g, see the weights table on this page (our arithmetic on the per 100 g figure for all 19 records); for example cooked, braised beef liver (168626) is 477.5 kcal for 250 g and 955.0 kcal for 500 g, and simmered chicken liver (171061) 417.5 kcal and 835.0 kcal.
