Join the NYUS waitlistGoogle autocomplete (hl=en gl=in, checked on 29 October 2026) suggests queries such as "asparagus calories 100g", "jicama calories 1 cup" and "artichoke calories per 100g" for these foods; these are suggestions, not search volumes. We found no NYUS guide on them. This guide gives ten USDA FoodData Central SR Legacy records, raw and boiled and drained, per 100 g and in the portions USDA's Measures list prints: asparagus, leeks, parsnips, yambean (jicama) and globe artichokes. IFCT 2017, the Indian Food Composition Tables from ICMR-NIN, has none of these vegetables, so this page uses SR Legacy only. More vegetables are in our broccoli, pumpkin, turnip and celery guide, chopped raw vegetables by the cup guide and tomato, onion, garlic, ginger and shallot guide.
The short answer
By USDA SR Legacy, raw parsnip (170417) is 75 kcal per 100 g, raw leek (169246) 61 kcal, raw globe artichoke (169205) 47 kcal, raw jicama (170073) 38 kcal and raw asparagus (168389) 20 kcal. Our reading: asparagus is the lightest by a wide margin, raw artichoke prints the most fibre (5.4 g) and protein (3.27 g) of the five raw rows, and USDA's boiled jicama record prints exactly the same kcal, kJ, water, protein and carbohydrate as its raw record (38 kcal), with no fibre or sugars row. Leek halves between its raw (61 kcal) and boiled-without-salt (31 kcal) records, but the two records hold different water (83 g against 90.8 g), so they are not the same weight of leek.
USDA SR Legacy: per 100 g
Figures are as the USDA record pages print them, read on 29 October 2026. Energy is USDA's kcal with the kJ it prints beside it; water, protein, total fat and carbohydrate (by difference) are in g, then fibre (g), total sugars (g) and sodium (mg), all per 100 g. "Not printed" means the record has no such row, not that the value is zero. These are US records on US samples, not Indian averages.

The data-type label on each field, as the record shows it
USDA's record pages show a data-type label beside some fields and none beside others, and it differs from record to record. This table copies what each record shows for each field; "no label shown" means the record prints no label there, not that we left one out. We do not interpret the labels beyond printing them.

The household portions USDA prints
These are the entries in each record's Measures list, as printed; the other entry on every record is 100 g, and boiled jicama (170074) has only that one. The kcal in the last column is ours: the printed kcal per 100 g times the grams, divided by 100, shown to 0.1 with half rounding up.

What stands out in the numbers
- Spear sizes: USDA prints raw asparagus spears at 12, 16, 20 and 24 g, which are 2.4, 3.2, 4.0 and 4.8 kcal by our arithmetic, and a 3.5 g spear tip; a cup of 134 g is 26.8 kcal.
- Raw against boiled: asparagus 20 raw against 22 boiled, parsnip 75 against 71, artichoke 47 against 53, leek 61 against 31 and jicama 38 against 38 kcal per 100 g; the raw and boiled records are separate USDA samples, so the differences are not a cooking effect we measured.
- Whole-vegetable weights differ a lot: USDA lists one medium jicama at 659 g (250.4 kcal by our arithmetic) and one large at 1200 g, against 89 g for a leek and 160 g for a parsnip.
Why these are reference rows, not your vegetable
- Names are USDA's. Jicama is USDA's second name for the yambean record; we do not say a vegetable sold under another name matches a record.
- Raw and boiled are different records. Log the one you weighed; the per 100 g rows are not interchangeable.
- US data. SR Legacy records are US samples, not Indian averages.
- Labels are printed, not judged. Calculated, Analytical and the longer labels are USDA's words on the record; we print them and draw no conclusion from them.
- No canned, frozen, salted or branded rows. Those SR Legacy records and any maker's label are not covered.
How to log it so the numbers hold
- Weigh the edible part, and say raw or boiled. 100 g of raw asparagus (our example weight) on SR Legacy 168389 is 20 kcal; four boiled spears at USDA's 60 g are 13.2 kcal by our arithmetic.
- Pick the record that matches what you ate. Boiled parsnip (170009) and raw parsnip (170417) differ by 4 kcal per 100 g in USDA's data.
- Add the oil separately. If you roast or saute these vegetables, log the oil you use in our ghee, oil and sugar guide.
Where NYUS fits (our app)
We make NYUS, so read this as ours. NYUS is an AI fitness and nutrition coach in early access on Android, with no ads and no data selling. You log foods yourself by searching 8,900+ Indian and global foods or by barcode, and a weekly check-in adjusts your calories, macros and step goal once enough is logged. Barcode coverage of Indian packaged foods is not complete, so search by name when a scan finds nothing.
What this page leaves out

- Canned, frozen and freeze-dried asparagus, leek and artichoke, the with-salt boiled rows and the asparagus soup records: other SR Legacy records, not used here.
- Jerusalem artichoke (169236): a different vegetable from the globe artichoke, not used here.
- Bamboo shoots, pak-choi, arugula, rutabaga and endive: other vegetables with SR Legacy records, not covered here.

How many calories are in asparagus per 100 g and per spear?
SR Legacy 168389 (Asparagus, raw) prints 20 kcal (85 kJ) per 100 g, with 2.2 g protein, 0.12 g fat, 3.88 g carbohydrate by difference, 2.1 g fibre and 1.88 g total sugars. USDA's Measures list for it has 1 cup (134 g), 26.8 kcal by our arithmetic, and spears by size: small (12 g), medium (16 g), large (20 g) and extra large (24 g), which are 2.4, 3.2, 4.0 and 4.8 kcal by our arithmetic. Boiled and drained asparagus (168390) is 22 kcal per 100 g; 4 spears (60 g) is 13.2 kcal by our arithmetic.
How many calories are in leek?
SR Legacy 169246 (Leeks, (bulb and lower leaf-portion), raw) prints 61 kcal (255 kJ) per 100 g, with 1.5 g protein, 0.3 g fat, 14.2 g carbohydrate by difference, 1.8 g fibre and 3.9 g total sugars. Its Measures list has 1 leek (89 g), 54.3 kcal by our arithmetic. The boiled row without salt (168426) is 31 kcal per 100 g, with 90.8 g water against 83 g raw; 1 boiled leek (124 g) is 38.4 kcal by our arithmetic. USDA's raw and boiled leek records are not the same weight of leek, so the 61 and 31 kcal are not the same food cooked.
How many calories are in parsnip?
SR Legacy 170417 (Parsnips, raw) prints 75 kcal (314 kJ) per 100 g, with 1.2 g protein, 0.3 g fat, 18 g carbohydrate by difference, 4.9 g fibre and 4.8 g total sugars. Does IFCT 2017 have these vegetables?
IFCT 2017, the Indian Food Composition Tables from ICMR-NIN, has no asparagus, leek, parsnip, jicama or artichoke row (we searched its PDF text for those names and their botanical names), so this page uses USDA FoodData Central SR Legacy only. SR Legacy records are US samples, not Indian averages.
What do Calculated and Analytical mean on these records?
USDA's records show a data-type label beside some fields and none beside others, and it differs by record. On all ten records the kcal and carbohydrate by difference are labelled Calculated. Other fields carry labels such as Analytical on some records and none on others; the label table on this page lists every field of every record exactly as the record shows it. Household portions are USDA's Measures list; the kcal for a portion is our arithmetic (printed kcal per 100 g times the grams, divided by 100, to 0.1).
